We are on the hunt for an exciting new role -  Head of Coffee, to take our coffee program to the next level.

Head of Coffee


Main Purpose - The Head of Coffee is responsible for leading the coffee experience across the business and managing the coffee team to ensure we deliver a consistent beverage experience each day. You will work alongside the café manager to continue to drive Three Flamingos high standards of customer service with a focus on creating a positive working environment and exceptional guest experience. This role is suited for an aspirational barista looking to take the next step into a leadership role and develop their management skills and experiences as part of our Senior leadership team.

The successful candidate will have:

  • 1-2yrs experience in a high-volume specialty coffee environment

  • Sound understanding of grinder settings, recipes, dosing and weighing

  • Proficient in latte art

  • Ability to maintain all coffee equipment including general maintenance, running repairs and training of all staff

  • A passion for hospitality and a desire to grow their career


  • Full Time (38hrs) – Salary position (includes weekend work)

  • Option to work a four-day week to suit your lifestyle if desired.

  • Salary - $55k to $65k plus super

Key Responsibilities

Coffee Operations:

  • Deliver and manage the coffee experience across the business, including the development of staff training and education ensure consistency of service.

  • Responsible for the management of all stock levels across the business relating to hot beverages including coffee beans, milks, packaging, tea, chocolate, and cleaning.

  • Stakeholder management for all related tea + coffee suppliers including but not limited to stock quality control, service scheduling and identifying new and innovative marketing opportunities relating to coffee, tea, and retail 

  • Develop and grow the retail program including the coordination of pop-up nights and special events in partnership with Toby’s Estate and other stakeholders

  • Sound understanding of all Front of house food and beverage items and ability to use the POS system.

  • A Focus on customer engagement and developing authentic relationships with our local customers

  • Pro-active in solving customer issues and satisfying customers in various situations.

  • Proactive in solving equipment or mechanical issues

  • Ensures that all team members provide customers with efficient, friendly, superior service on a consistent basis.

  • Consistently monitors, coaches, and encourages team members to meet Three Flamingos service standards.

  • Maintains high cleanliness standards at all times

Marketing, Budgeting, Education + Training

  • Work with the marketing Coordinator to deliver weekly coffee content to promote the program, increase retail sales and focus on coffee education to grow awareness of specialty coffee

  • Manage the Coffee + Hot drink budget to help grow our business sustainably

  • Ensure all checklists and training guides are always up to date and available to staff

  • Work alongside the café manager to implement a staff development program for all existing coffee team members including training and regular development opportunities.

  • Ensures that all team members are educated on our coffee and hot drink products and services, new beverages and current blends and offerings to ensure consistent messaging and education to our customers.
